Ingredients
  • 2 green bell pepperssliced
  • 2 red bell pepperssliced
  • 2 yellow bell pepperssliced
  • 1large Onionsliced
  • 2 tbs oil oil
  • 2tsp chili powder
  • 1tsp cumin
  • 1tsp paprika
  • 2tsp garlic powder
  • 1tsp salt
  • 1tsp Pepper
  • 1lb Chicken thighsboneless, skinless
  • 1 Avocadodiced
  • 1 Roma Tomatodiced
  • 8 corn tortillas
  • 1bunch Cilantrochopped
Instructions
  1. Preheat oven to 425ºF.
  2. Combine all ingredients except for the avocado and tomato in a large bowl. Toss with olive oil and spices until chicken and vegetables are evenly covered.
  3. Spread everything over a baking sheet and cook for about 25 minutes, or until chicken is thoroughly cooked.
  4. Serve on corn tortillas with avocado, cilantro and diced tomato on top
