Ingredients
  • 8 oz baby bella mushrooms chopped
  • 1 carrot shopped
  • 1 cup broccoli shopped
  • 1/2 Onion chopped
  • 3 cloves garlic chopped
  • 2 tbs olive oil
  • 2 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp Pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 can black beans drained and rinsed
  • 1/2 cup panko bread cumbs
  • 2 organic eggs
  • 2 tbs tomato paste
  • 1/2 cup cooked quinoa

Instructions
  1. Preheat oven to 375ºF
  2. Mash beans in a large bowl.
  3. In a food processor, add carrot, broccoli, onion and garlic and chop finely.
  4. In separate bowl, mix together egg, tomato paste and spices.
  5. Stir together egg mixture, mashed beans and chopped veggies with the panko and quinoa. Add panko and quinoa slowly to make sure you get the right consistency to form patties. It may take less then you have there.
  6. When you have a nice consistency, form 8 patties and place on baking sheet.
  7. Bake for about 10 minutes on each side and enjoy!
