Ingredients

  • 1/2 cup Browned Coconut Butter (melted)
  • 1/4 cup Pure Maple Syrup
  • 1/3 cup Coconut Sugar
  • 1/4 cup Unsweetened Almond Milk
  • 2 tsp Vanilla
  • 3/4 cup Almond Flour
  • 3/4 cup Buckwheat Flour (or spelt flour as substitute)
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 2 tbs Corn Starch
  • 1/2 tsp Salt
  • 1/3 cup Organic Dark Chocolate Chips (vegan)

Instructions

  • Preheat oven to 350ºF
  • In a large mixing bowl, mix the melted coconut butter, maple syrup, coconut sugar, almond milk and vanilla until completely mixed
  • Mix in almond flour, buckwheat flour, baking powder, baking soda, and corn starch.
  • Lightly mix in dark chocolate chips.
  • Scoop cookie dough using a cookie scoop or tablespoon onto a cookie baking sheet.
  • Bake in preheated oven for 10-12 minutes.
  • Let the cookies cool and enjoy!
