Here is one of my favorites that only takes about 15 minutes. It’s a heart-healthy delicious meal!

Zoodles & Shrimp

  • 2 medium zucchini spiraled` into zoodles
  • 3/4 pounds shrimp peeled
  • 1 lemon juice & zest
  • 4 cloves garlic minced
  • salt & pepper to taste
  • 1/3 cup fresh parsley
  • 1/4 cup grass fed parmesan grated


  • Cook the shrimp in the olive oil, garlic, and lemon
  • Spiralize the zucchinis as the shrimp are cooking
  • Add the zoodles and other spices until zoodles have softened to your desire.
  • Top with parsley and Parmesan cheese.
