Here is one of my favorites that only takes about 15 minutes. It’s a heart-healthy delicious meal!
Zoodles & Shrimp
Servings: 2 people
- 2 medium zucchini spiraled` into zoodles
- 3/4 pounds shrimp peeled
- 1 lemon juice & zest
- 4 cloves garlic minced
- salt & pepper to taste
- 1/3 cup fresh parsley
- 1/4 cup grass fed parmesan grated
- Cook the shrimp in the olive oil, garlic, and lemon
- Spiralize the zucchinis as the shrimp are cooking
- Add the zoodles and other spices until zoodles have softened to your desire.
- Top with parsley and Parmesan cheese.
