Baked Cod with Avocado Salsa

If you are looking for a quick and healthy dinner, then look no further! This delicious meal is fresh, full of protein and takes under 30 minutes to make!

  • 1 pound boneless, skinless cod fillets
  • 1 avocado, diced
  • 2 Roma tomatoes, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 tsp cumin
  • 1/8 tsp cayenne
  • 3 tbs lime juice
  • salt & pepper

Preheat oven to 400F.

In a small bowl, combine the avocado, tomatoes, red onion, cilantro, cumin, cayenne, 2tbs of lime juice and a pinch of salt and pepper. Mix together and set aside to allow flavors to meld.

Lightly grease a baking dish with cooking oil. Sprinkle cod fillets with salt and pepper and the remaining lime juice. Bake until the cod fillets are opaque and flake easily with a fork (about 15-20 minutes).

Once cod is complete, remove from pan and top with avocado salsa. Enjoy!
