It is time to make tacos! With the warm weather here, try making them outside on the grill. This is a tasty recipe to feed family and friends while you are outside enjoying the nice weather

  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 4 garlic cloves
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 4 boneless skinless chicken breast (cut into half for marinating)
  • corn tortillas
  • Toppings of your choice (lettuce, tomato, onion, cilantro, salsa, etc)

In a large resealable bag, combine and mix the first 6 ingredients. Add the chicken and reseal the bag. Marinate for a minimum of 40 minutes (you could even let the chicken marinate overnight for full flavor).

Once you are done marinating, grill the chicken over medium heat for 5-8 minutes per side (or until juices run clear).

As the chicken is cooling, place corn tortillas on grill for 1 minute on each side.

Slice chicken into thin strips and serve on warm tortillas with the toppings of your choice.
