Baked Fajitas
Servings: 4 people
Ingredients
- 2 green bell peppers sliced
- 2 red bell peppers sliced
- 2 yellow bell peppers sliced
- 1 large Onion sliced
- 2 tbs oil oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 2 tsp garlic powder
- 1 tsp salt
- 1 tsp Pepper
- 1 lb Chicken thighs boneless, skinless
- 1 Avocado diced
- 1 roma tomato diced
- 8 corn tortillas
- 1 bunch cilantro chopped
Instructions
- Preheat oven to 425ºF.
- Combine all ingredients except for the avocado and tomato in a large bowl. Toss with olive oil and spices until chicken and vegetables are evenly covered.
- Spread everything over a baking sheet and cook for about 25 minutes, or until chicken is thoroughly cooked.
- Serve on corn tortillas with avocado, cilantro and diced tomato on top
