Ingredients

  • 2 green bell peppers sliced
  • 2 red bell peppers sliced
  • 2 yellow bell peppers sliced
  • 1 large Onion sliced
  • 2 tbs oil oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp Pepper
  • 1 lb Chicken thighs boneless, skinless
  • 1 Avocado diced
  • 1 roma tomato diced
  • 8 corn tortillas
  • 1 bunch cilantro chopped

Instructions

  • Preheat oven to 425ºF.
  • Combine all ingredients except for the avocado and tomato in a large bowl. Toss with olive oil and spices until chicken and vegetables are evenly covered.
  • Spread everything over a baking sheet and cook for about 25 minutes, or until chicken is thoroughly cooked.
  • Serve on corn tortillas with avocado, cilantro and diced tomato on top
