Chipotle Bowl with Chicken & Cauliflower Rice

Ingredients

Chipotle Chicken

  • 1 1/2 lbs boneless skinless chicken thighs
  • 1 tbsp adobo sauce
  • 5 Chipotle Peppers
  • 2 tbsp vegetable oil
  • 1 tsp cumin
  • 2 cloves garlic minced
  • 1/2 tsp dried oregano

Vegetables

  • 1 large red onion sliced
  • 1 large orange pepper sliced
  • 1 corn on the cob shaved off the cob

Cauliflower Rice

  • 1 tbsp vegetable oil
  • 1 medium cauliflower head shredded
  • 2 tsp lime juice fresh
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt & pepper to taste
  • 1 tbs vegetable oil

Extra Toppings

  • 1 avocado sliced
  • 1/2 bunch cilantro chopped
  • 1 lime sliced

Instructions

  • Blend chipotle peppers, adobo sauce, garlic, oil, cumin, oregano until pureed.
  • Pour 75% of the mixture over chicken thighs in a bowl.
  • For best results, let marinate for 1 hour or longer.
  • Pour the remaining sauce over the veggies.
  • Heat oil in large nonstick pan and add marinated chicken.
  • When chicken is halfway cooked, add the veggies and remaining sauce to the hot pan, stirring occasionally.
  • In a separate pan on medium-high heat, add remaining oil, cauliflower, onion powder, garlic powder, lime juice. Stirfry for about 4 minutes until golden brown.
  • Combine cauliflower, chicken and veggies into a bowl.
  • Top with avocado, cilantro and sliced tomato.
