Chipotle Bowl with Chicken & Cauliflower Rice
Here is an easy recipe that is full of flavor and takes only 35 minutes

Ingredients
Chipotle Chicken
- 1 1/2 lbs boneless skinless chicken thighs
- 1 tbsp adobo sauce
- 5 Chipotle Peppers
- 2 tbsp vegetable oil
- 1 tsp cumin
- 2 cloves garlic minced
- 1/2 tsp dried oregano
Vegetables
- 1 large red onion sliced
- 1 large orange pepper sliced
- 1 corn on the cob shaved off the cob
Cauliflower Rice
- 1 tbsp vegetable oil
- 1 medium cauliflower head shredded
- 2 tsp lime juice fresh
- 1 tsp onion powder
- 1 tsp garlic powder
- salt & pepper to taste
- 1 tbs vegetable oil
Extra Toppings
- 1 avocado sliced
- 1/2 bunch cilantro chopped
- 1 lime sliced
Instructions
- Blend chipotle peppers, adobo sauce, garlic, oil, cumin, oregano until pureed.
- Pour 75% of the mixture over chicken thighs in a bowl.
- For best results, let marinate for 1 hour or longer.
- Pour the remaining sauce over the veggies.
- Heat oil in large nonstick pan and add marinated chicken.
- When chicken is halfway cooked, add the veggies and remaining sauce to the hot pan, stirring occasionally.
- In a separate pan on medium-high heat, add remaining oil, cauliflower, onion powder, garlic powder, lime juice. Stirfry for about 4 minutes until golden brown.
- Combine cauliflower, chicken and veggies into a bowl.
- Top with avocado, cilantro and sliced tomato.
