Cozy Turmeric Chicken & Cauliflower Soup

A perfect soup that provides antioxidant and anti-inflammatory properties keeping you healthy in these cold winter months.

  • 2-4 Organic Chicken Thighs
  • 4 cups Cauliflower Rice
  • 2 Celery Stalks (sliced)
  • 2 Carrots (sliced)
  • 3 cups Chicken Stock or Broth
  • 1 Bay Leaf
  • 2 cups Water
  • 2 tbsp Avocado Oil, Coconut Oil or Olive Oil
  • 1 tsp Turmeric
  • 1/4 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1 tbsp Sea Salt
  • 1/2 tsp Sea Salt ((for cauliflower rice))
  • 1/4 bunch Parsley
  1. Slice carrots and celery.

  2. Cut stems and leaves off of the cauliflower. Cut to the appropriate size to fit in the blender. Blend until you get cauliflower rice.

  3. In a pot, bring water and chicken stock to boil.

  4. Add chicken, carrots, celery, bay leaf, onion powder, garlic powder, and salt. Lower heat to a simmer and cover with a lid.

  5. Heat the oil in a skillet over medium heat.

  6. When the oil is hot, cook cauliflower rice, turmeric, and salt for 10 minutes.

  7. When chicken thighs are fully cooked, remove and shred chicken to bite-size.

  8. Add chicken and cauliflower rice back to the soup and simmer for 1-2 minutes.

  9. Sprinkle with parsley and enjoy!
