Grain Free, Gluten Free Blueberry Banana Breakfast Bread

Ingredients

  • 4 bananas, lightly browned
  • 6 eggs
  • 1 tbsp vanilla extract
  • 4 tbs coconut oil
  • 1/2 tsp sea salt
  • 1 tsp baking soda
  • 1/2 cup coconut flour
  • 1 cup blueberries

Directions

  1. Peel the bananas and puree in blender
  2. Add the eggs, vanilla and coconut oil to blender and mix until smooth
  3. Add the salt, baking soda and coconut flour and mix again
  4. Combine mixture and blueberries into a bowl and stir
  5. Line the loaf pans with parchment paper
  6. Grease with coconut oil
  7. Pour the batter into the pans
  8. Bake at 325 ºF for 50 minutes or until a toothpick comes out clean
