Grilled Chicken with Pineapple Relish
If you are looking for an easy, off-the-grill and refreshing meal, look no further! This simple recipe does not take much time, but is absolutely delicious topped with the refreshing pineapple relish.

Ingredients
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1/2 tsp onion powder
- 1/2 tsp freshly ground black pepper
- 1 tsp salt using 1/2 tsp for chicken and 1/2 for relish
- 8 Chicken thighs
- 3 cups pineapple cubed small
- 1 cup corn (fresh from cob or from strained can)
- 1/2 cup red bell pepper chopped
- 1/3 cup fresh basil diced
- 1/4 cup Red onion chopped
- 1 tbs cider vinegar
Instructions
- In a small mixing bowl, add garlic powder, cumin, onion powder, black pepper and 1/2 tsp of salt. Mix well.
- Rub chicken thighs with spice mixture. If there is skin on the chicken, you can either remove or make sure to rub spices underneath the skin.
- The longer you let it sit, the better. Helps flavor the chicken!
- Heat barbeque grill to medium heat. Place chicken on the grill once it is heated up.
- Grill for about 2 minutes to sear one side, flip and grill for about 8-10 minutes. Flip chicken to the original side and grill for about 8 minutes, or until chicken is thoroughly cooked. (cook time will vary depending on grill and thickness of chicken)
- While chicken is cooking, in a large mixing bowl, stir together pineapple, corn, bell pepper, basil, onion, vinegar and remaining salt.
- Serve relish over grilled chicken.
