Sweet Potato Breakfast Bowl

Ingredients

  • 1.5 cups Salsa
  • 1.5 lbs Sweet Potato cubed
  • 1 tbs Olive Oil
  • 1 tbs Garlic Minced
  • 1 tsp Onion Powder
  • 1 tsp Ground Cumin
  • 1/4 tsp Cayenne Pepper
  • 8 Eggs
  • 2 Avocados sliced
  • 1 bunch Cilantro chopped

Instructions

  • Preheat oven to 450ºF
  • Toss sweet potato with olive oil and spices until they are evenly coated
  • Roast sweet potatoes for about 30 minutes, or until tender/thoroughly cooked
  • Cook eggs until they are over medium
  • In each serving's bowl, place sweet potato, eggs and top with salsa and avocado.
  • Sprinkle with chopped cilantro
  • Enjoy!
