Sweet Potato Breakfast Bowl
Servings: 4 people
Ingredients
- 1.5 cups Salsa
- 1.5 lbs Sweet Potato cubed
- 1 tbs Olive Oil
- 1 tbs Garlic Minced
- 1 tsp Onion Powder
- 1 tsp Ground Cumin
- 1/4 tsp Cayenne Pepper
- 8 Eggs
- 2 Avocados sliced
- 1 bunch Cilantro chopped
Instructions
- Preheat oven to 450ºF
- Toss sweet potato with olive oil and spices until they are evenly coated
- Roast sweet potatoes for about 30 minutes, or until tender/thoroughly cooked
- Cook eggs until they are over medium
- In each serving's bowl, place sweet potato, eggs and top with salsa and avocado.
- Sprinkle with chopped cilantro
- Enjoy!
