- 1/2 cup Browned Coconut Butter (melted)
- 1/4 cup Pure Maple Syrup
- 1/3 cup Coconut Sugar
- 1/4 cup Unsweetened Almond Milk
- 2 tsp Vanilla
- 3/4 cup Almond Flour
- 3/4 cup Buckwheat Flour (or spelt flour as substitute)
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 2 tbs Corn Starch
- 1/2 tsp Salt
- 1/3 cup Organic Dark Chocolate Chips (vegan)
Preheat oven to 350ºF
In a large mixing bowl, mix the melted coconut butter, maple syrup, coconut sugar, almond milk and vanilla until completely mixed
Mix in almond flour, buckwheat flour, baking powder, baking soda, and corn starch.
Lightly mix in dark chocolate chips.
Scoop cookie dough using a cookie scoop or tablespoon onto a cookie baking sheet.
Bake in preheated oven for 10-12 minutes.
Let the cookies cool and enjoy!
